Miso-Tahini Roasted Cauliflower Steaks

- 1 large cauliflower head (sliced into thick steaks)
- 2 tbsp miso paste
- 2 tbsp tahini
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp sesame seeds
- Salt & pepper to taste
- ½ cup Greek yogurt (for optional sauce)
- 1 tbsp chopped fresh herbs (for garnish)
Instructions
- Preheat oven to 400°F (200°C)
- Whisk miso paste, tahini, lemon juice, and olive oil into a smooth marinade.
- Brush over cauliflower steaks and place on a baking sheet.
- Roast for 20-25 minutes until golden brown.
- Sprinkle with sesame seeds and serve with yogurt-herb sauce.
