Ingredients

    • 1 large cauliflower head (sliced into thick steaks)
    • 2 tbsp miso paste
    • 2 tbsp tahini
    • 1 tbsp olive oil
    • 1 tbsp lemon juice
    • 1 tsp sesame seeds
    • Salt & pepper to taste
    • ½ cup Greek yogurt (for optional sauce)
    • 1 tbsp chopped fresh herbs (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C)
  2. Whisk miso paste, tahini, lemon juice, and olive oil into a smooth marinade.
  3. Brush over cauliflower steaks and place on a baking sheet.
  4. Roast for 20-25 minutes until golden brown.
  5. Sprinkle with sesame seeds and serve with yogurt-herb sauce.
