Ingredients

    • 2 medium sweet potatoes (diced)
    • ½ cup kimchi (chopped)
    • 1 tbsp olive oil
    • 1 egg
    • 1 tbsp green onions (chopped)
    • 1 tsp sesame seeds
    • Salt & pepper to taste

Instructions

  1. Heat olive oil in a pan and sauté sweet potatoes until golden and tender.
  2. Stir in chopped kimchi and cook for another 2-3 minutes.
  3. Crack an egg on top, cover, and steam for 2-3 minutes until set.
  4. Garnish with green onions and sesame seeds.
