Kimchi & Sweet Potato Hash with Poached Egg

Ingredients

- 2 medium sweet potatoes (diced)
- ½ cup kimchi (chopped)
- 1 tbsp olive oil
- 1 egg
- 1 tbsp green onions (chopped)
- 1 tsp sesame seeds
- Salt & pepper to taste
Instructions
- Heat olive oil in a pan and sauté sweet potatoes until golden and tender.
- Stir in chopped kimchi and cook for another 2-3 minutes.
- Crack an egg on top, cover, and steam for 2-3 minutes until set.
- Garnish with green onions and sesame seeds.
